Cleaning up the interior and engine compartment

I be been watching A LOT of YouTube videos to figure out my plans for this build. I’ve seen many videos that mention stripping the factory seam sealer. Why would I want to do that? They never talk about why it’s getting stripped. I understand if it’s in a rusted area but if it’s clean, why not leave it? They always apply more before painting. Why go through the trouble? If I were to strip all the seam sealer, what are the options for replacing it? I’m guessing there’s a 3M product for that.
